Whatever it finds in the MBR tells it what to do. I'm trying to install Ubuntu alongside my Windows 8.1 which is installed in BIOS compatible EFI mode (MBR). When I boot the Ubuntu 16 install DVD in UEFI mode it tells me Windows may become unbootable (do I didn't install), and when I start the DVD in BIOS mode it properly finished the installation but there's no grub boot loader. It just loads into Win 8.
