I have seen some games where you press buttons to do stuff. An example would be that new game where you have to dodge the Xs. I am just wondering how this is done? I have heard it has something to do with EUDs. But I thought EUDs were corrupted by a patch in SC and people have to downgrade?

EUD actions were removed, not conditions. Note that using keypress detection will break multiplayer, unless you only use it to display text.

If it is for a multiplayer then I don't recommend using them at all since if a person has Mac it will desync. If it is single player knock yourself out.

The closest you can get to multiplayer keypress detection: http://www.staredit.net/topic/7729/ with hotkeys, of course it will only work for numbers, and it will crash Macs.

DarkenedFantasies -- Probably just didn't care. For example, at some point before release, they've updated the graphics of some of the Protoss buildings (Forge, CyberCore, Citadel, Observatory, Arbiter Tribunal), but instead of properly re-rendering them with edited 3D models, they did crappy copy-paste jobs on the rendered graphics.

Ultraviolet -- I suppose we'll likely never know, but my guess would be that they already saw it operating successfully and there was no monetary incentive to finish the original work. And the dev cycle in old school Blizzard was so hectic, it's possible it just got forgotten about after the original game got released. Plus there's an element of existing MPQ files that were packaged with the original discs becoming outdated if they updated it. And it's not like they remade the original MPQs, they just made new ones for BW specifically
