VII was the first one I played and I have voted for it. However I was also a big fan of IX, and VI was also good.
FF8 was the most revolutionary, and still looks beautiful to me. Limit breaks in that game were the best. Also, gunblade!

NudeRaider -- EUD actions, specifically. The conditions remained. Today we can even have actions again, but they're all virtualized/whitelisted (not sure on the actual technical implementation) so you can only use them for specific intended purposed, not arbitrary code injections.
