So I played a map on battle.net that the creator said was not protected and that we could open it up and whatever but I can't find where the maps are saved!

I don't think they are saved, since you redownload them everytime. I believe they are deleted upon exit of SC2.
However, when you go to open a document in the editor (File->Open), you can change the tab to Battle.Net, log in to your battle.net account, and open maps that have been hosted on Battle.Net. I believe it will only show unprotected maps.
