Can someone briefly explain Functions and..their function?

Namely what they do..and why I need them. Ive begun work using them but im..a little lost as to why im even using them, kindof like trying to pick up a potato to make light (without knowing strange earth-science)

There are probably sites that explain better, because functions aren't SC-specific. Anyway, functions are like triggers, but in code. E.g. if a number equals 6, do this. Else, do that.

If you're just starting out with coding, I'd suggest using the normal trigger editor and only using the text trigger editor a little, until you have more experience.

Red classic.

Relatively ancient and inactive

Functions accept an iput and provide an output. More applicably, they are what powers triggers: Triggers are functions in that they accept events and conditions as input and then do something as ouput. Each action is a function with a null input and an output. A custom function would be one that you define with whatever inputs/outputs you'd like.
